引き続き糖尿病日本食英語レシピをネットで調べて見つかったら掲載してもいいのですが、送信した携帯メールに書いたような理由で、やはり食事療法の専門家が書いた本などをAさんに贈ったほうがいいと思います。
ですので、あくまでもこのブログのレシピは参考程度にお考えください。

Crispy Japanese Eggplant with a spicy onion ginger sauce.
4 Servings
Ingredients
12 oz whole eggplant , Japanese, cut into 3 x 1/2-inch sticks (about 5 cups)
1/3 cup fresh chopped green onion , minced
2 tbsp low sodium soy sauce
2 tbsp rice vinegar
1 tsp fresh ginger root , peeled, grated
1 tsp extra virgin olive oil
1 tsp chili paste (garlic style)
1/4 cup fresh cilantro
Directions
1 Steam eggplant, covered 2 minutes.
2 Mix together green onions, soy sauce, vinegar, ginger, oil, and garlic. Gently toss eggplant with sauce. Top with cilantro leaves.
Additional Information
Be sure the eggplant are left crisp-tender. Serve this right away so it does not get soggy.

Diabetic Japanese Soup
This diabetic Japanese soup is a real treat for Japanese food lovers. All the spices, mushrooms, and ginger make this dish very heart healthy and full of flavor!
Japanese Noodle Soup Recipe
Servings: 6
1 package Japanese udon noodles - (8 1/2 oz)
1 tsp vegetable oil
1 medium red bell pepper, cut thin strips
1 medium carrot, diagonally sliced
2 green onions, thinly sliced
2 cans fat-free reduced-sodium beef broth, (14 oz ea)
1 cup water
1 tsp reduced-sodium soy sauce
1/2 tsp grated fresh ginger
1/2 tsp freshly-ground black pepper
2 cups thinly-sliced fresh shiitake mushrooms, stems removed
4 oz daikon (Japanese radish), peeled, and
cut into thin strips
4 oz firm tofu, drained, and
cut into 1/2" cubes
Recipe Instructions:
1. Cook noodles according to package directions, omitting salt; drain. Rinse; set aside.
2. Heat oil in large nonstick saucepan until hot. Add red bell pepper, carrot and green onions; cook until slightly softened, about 3 minutes.
3. Stir in beef broth, water, soy sauce, ginger and black pepper; bring to a boil. Add mushrooms, daikon and tofu; reduce heat and simmer 5 minutes.
Place noodles in soup tureen; ladle soup over noodles.
This recipe yields 6 servings.
Exchanges Per Serving: 1 1/2 Starch, 1/2 Vegetable, 1/2 Fat.

Soba Noodles, Chicken, and Veggies with Caramelized Garlic Sauc
Soba Noodles, Chicken, and Veggies with Caramelized Garlic Sauce
Warning: must love garlic.
This dish serves 1, but can easily be modified to serve more.
Soba noodles are gluten-free. They are made from buckwheat and metabolize much more slowly than most carbohydrates, which makes them ideal for diabetics and health-conscious individuals. You can pick them up at your local japanese market or health food store.
If you don't have any chicken leftovers on hand, Marinate chicken breast tenderloins or sliced breasts in some sesame oil, canola oil, chopped up garlic, sake or white wine, vinegar, salt and pepper for 4-24 hours. Cook in nonstick skillet.. adding a bit of soy sauce and sake/wine halfway through the cooking.
This sauce can be used on any noodles with just about any vegetables you like. Enjoy :)
